Dried spaghetti, or any other thin noodles

  1. Boil a large saucepan of pasta. Cook the pasta until it is al dente. Reserve 1 cup of the pasta water.
  2. Use a vegetable peeler while you wait to cut 1-2 pieces of lemon peel. Set aside the thinnest strips of peel. Add the rest of your lemon zest to a larger saucepan. The lemon should be juiced in a separate bowl.
  3. In a saucepan, add the butter and cream to the pan along with the lemon zest. Reduce heat to low and simmer the mixture for a few minutes to let the zest infuse. Stir frequently.
  4. After the pasta is cooked to your liking, take it out with tongs and transfer to the cream-based mixture in a large pan. Mix gently to coat. Mix in the parmesan until the pasta looks creamy. Pour in 1 cup of the reserved pasta liquid to loosen it.
  5. Sprinkle the lemon juice remaining over the pasta and then serve.
